Chicken and Herb Quinoa

Ingredients:
2 cups quinoa
3 cups chicken broth
1 Tbsp minced dried garlic
1 1/2 Tbsp Italian herbs
Salt to taste
pepper to taste
1 Tbsp of olive oil
Directions:
place a large pot on the stove over medium high heat, bring to a boil chicken broth, garlic, Italian herbs, olive oil, salt and pepper.
While that hat starts to boil rinse the quinoa (use a sifter to rinse). Once rinsed and broth is boiling add quinoa. Turn heat down to low and simmer until quinoa is tender and broth has been completely absorbed by the quinoa. Fluff with a for a serve as a side dish to your favorite protein.
About the recipe:
This is a favorite side for pork or beef at my home. At first everyone was convinced I was I made cous cous. Yes, it does kind of make you think of cous cous and it’s a very easy side dish to make.
