Fruity granola

Ingredients:
4 cups oats (certified gluten free if concerned about cross contamination)
3 cups sliced almond
2 cups shredded coconut
1 cup chopped walnuts
1 cup vegetable oil
3/4 honey
2 tsp cinnamon
1 Tbsp vanilla
1 cup Dried apricots chopped small
1 1/2 cups Golden raisins chopped small
1 cup Dried dates chopped small
1 cup Dried blueberries chopped small
1 1/2 cups Dried cherries chopped small
Directions:
Preheat oven to 350
Chop all the dried fruit to be about the same size once all the fruit is chopped place in a bowl and set aside.
Combine your oats, almonds, shredded coconut, almonds and walnuts in a large bowl. Next whisk together the oil, honey, cinnamon, salt and vanilla. Once whisked together pour over the oat mixture, using a wooden spoon stir until everything is evenly coated. Once coated spread the oats out on an extra large baking sheet lined with parchment paper or two regular size baking sheets lined with parchment paper and bake for about 35-40 minutes or the mixture is of a golden brown color.
Remove from oven now mix the dried fruit in. Stir occasionally as it cools for a nice granola or spread out evenly and allow to completely cool and cut into bars for some incredible granola bars.
Enjoy as a snack on its own or a topping on yogurt or fruit.
