Grilled Tuscan Pork Loin

Ingredients:
Pork tenderloin
3/4 cup olive oil
1/2 cup dried Italian herbs
1/2 cup fresh rosemary finely chopped
1/2 cup dried basil
1 Tbsp red pepper flakes (optional)
2 Tbsp salt
2 Tbsp fresh ground black pepper
Directions:
Turn grill on or stove top griddle.
First butterfly your pork so you will get a nice even cook. To do this you will need a sharp knife and a cutting board, cut down the middle lengthwise leaving about 1 inch on one side. Once sliced open like a book. Next brush both sides with olive oil set aside.
Now make your seasoning blend. Combine rosemary, Italian herbs, basil, red pepper flakes, pepper and salt. Now bake to the pork, sprinkle spice blend over both sides (I like to pat it in).
Once coated in the spice blend place on hot grill, cook sufficiently on both sides. Pork is cooked at 145-150 if you use a meat thermometer, this temperature insures the pork is cooked while retaining its juices. Remove from heat let sit for a few minutes slice and serve.

I love making pork this way it’s so flavorful and juicy especially now that its finally spring and working its way to summer. It’s a great grilling kind of dinner, I like to pair it with grilled vegetables and quinoa to make it a scrumptious well rounded dinner. And it’s toddler tested and approved. Another great thing is it’s naturally dairy free and because you are making your own spice blend it’s also gluten free.
