Mini Blueberry Muffins

(Gluten free and dairy free)

Makes 48 mini muffin.
prep time 5 minutes
bake time 18 minutes
total time 23 minutes
Ingredients:
1 cup gluten free flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
2/3 cup non dairy milk+ tbsp vinegar (buttermilk)
1/3 cup oil
1 egg beaten
1/2 cup sugar
1 cup blueberries
1 Tbsp vanilla
1 Tbsp cinnamon
1/8 tsp nutmeg
Directions:
Preheat oven 375
First sift together flour, baking soda, baking powder, sugar, cinnamon and nutmeg.
Next create a well in the middle of your dry ingredients and add in buttermilk, egg, oil and vanilla mixing with a wooden spoon until well incorporated. Fold in blueberries.
Spray a mini muffin pan with cooking spray fill with muffin batter and bake for about 18 minutes.
Remove from oven let cool and enjoy.
I don’t know about you but my toddler loves picking his food apart, except when I make mini muffins then the whole thing just goes in his mouth. He absolutely loves these muffins and I love how quick and easy they are to make and a bonus in my opinion much less messy then a whole muffin. They are so delicious and everyone loves them! Another great thing about them is there great for parties, potlucks and play dates.
