Omelette in a mug

This is such a simple and fast breakfast recipe. Taste so good and goes together so fast.

Ingredients:
2 eggs
cooking spray
You choice of add ins
shredded cheese
diced ham
salsa
mushrooms
cooked sausage
bacon crumbles
tomatoes
thawed frozen spinach
Directions:
First grab a large mug and spray with cooking spray. Then crack eggs into mug and beat with a fork. Then stir in any add ins you want my go to is salsa and cheese but you can add anything you want.
Once all mixed together place in microwave for about 2 minutes. or until completely cooked. Yes the eggs will rise and look like it’s going to escape the cup, it won’t once it’s done it will shrink back down into the cup. remove from microwave, let cool a little and enjoy.
So this recipe is very simple. It was a healthy option I came up with for those busy mornings when you want something other then a quick bowl of cereal before your racing out the door trying not to be late. This is on of those breakfasts that even my toddler wants to eat. Although he likes most breakfast foods so you can’t really go wrong.
Pro tip:
If you know you have a busy week ahead or enjoy meal prepping this is one of those where I would cook up the sausage or bacon crumble it and put it in a sealed container in the fridge for a super fast and convenient way to make this omelette in a cup even faster. For Dairy free just skip the cheese or use a dairy free melting cheese of your choice.
