Chicken Fajitas

This is a fairly simple chicken fajitas. My toddler absolutely loves this dinner, it’s full of flavor, bright and flavorful.
Ingredients:
Brine
3 chicken breasts
1/4 cup carne asada seasoning or fajitas seasoning
2 tbsp baking soda
2 cups water
red bell pepper sliced
green bell pepper sliced
yellow bell pepper sliced
yellow onion sliced
salt to taste
pepper to taste
corn tortillas
tomato diced
avocado sliced
sour cream (leave off for dairy free)
shredded Mexican cheese or cajota cheese (leave off for dairy free)
cooking spray

Directions:
First you will want to make your brine in a large bowl stir together the carne asada seasoning, baking soda, and water (it’s best if the water is hot). Slice your chicken into strips and add to brine. Let the chicken brine for at least 30 minutes before cooking.
Next get a skillet on the stove over medium high heat, once the skillet is hot spray with cooking spray. Add the vegetables to the pan season with salt and pepper. Cook the vegetables until just tender. Once cooked remove from skillet set aside and cover to keep warm.
Next drain the brine off the chicken. In the skillet you cooked the vegetables in, turn heat down to medium and spray with cooking spray. Cook about a third of the chicken at a time. Cook through, remove from heat and add to the vegetables.
On a griddled heat corn tortillas a few seconds on each side. Once warmed wrap in a tea towel to keep warm.
Serve with toppings and enjoy.
This is a family favorite especially for my toddler. it’s a fairly easy dinner. A few tips I have for making this dish is you will want to cook in a cast iron skillet or wak if you have but it’s not crucial. The longer the chicken brines the more flavor it will have. Any leftovers are great for lunch the next day. If there’s a lot of chicken left over it’s great in quesadillas or on chicken nachos.
