Impossibly Delicious Chocolate Strawberry Tart

Ingredients

4 lbs thin sliced strawberries


Chocolate ganache

3 1/2 cups dairy free semi sweet chocolate chips (I like to get the Costco chocolate chips cost effective and dairy free)

2 cans full fat coconut milk

1 cup sugar


Chocolate tart base

2 1/2 cups gluten free flour (I like bobs red mill)

1/2 cup sugar

1 cup vegan butter (I like earth balance in the cubes)

1 cup cocoa powder


Glaze

1/2 cup sugar

1/2 cup water

1 Tbsp cornstarch

1/4 cup water

For the chocolate ganache in a double broiler over medium high heat start to melt the chocolate. Stir occasionally until melted, while you do that in a glass bowl heat coconut milk in microwave. Remove chocolate from heat place glass bowl with milk on double broiler add chocolate whisking until fully incorporated. Now whisk in sugar. Once everything is fully incorporated remove from heat cover with plastic wrap and refrigerate overnight.


Preheat oven to 350


For the chocolate tart whisk together flour, sugar and cocoa powder. Next blend in butter with your fingers or with a pastry cutter until fully incorporated it should resemble the texture of a pie crust. Line a two 9x13 pan with parchment paper press dough into the bottom of the pan then bake for roughly 20 minutes or until the edges darken slightly. Remove from oven and allow to cool.


for the glaze in a small sauce pot combine sugar and the 1/2 cup of water bring to a boil. Once boiling mix corn starch with 1/4 cup water together before adding to boiling sugar and water turn down heat whisk in cornstarch mixture and allow to thicken slightly.


once cooled layer in the ganache top with strawberry slices and glaze over top. Slice, serve and enjoy.

About the recipe

So I know it’s so hard to get those rich decadent chocolate desserts without the gluten or dairy. I was inspired to make this one to to give a little treat to those around me who rarely get something so good without getting sick and I want to share this recipe with others so that either you or someone you know who often times feels left out no longer has to. While also being easy to make and all ingredients can be found at any grocery store.
