What’s in the freezer pork fried rice!

This recipe is honestly just a way to reimagine the leftovers and odds and ends in your fridge and freezer. It is super delicious full of flavor and you’d never even know you were eating leftovers for dinner. It’s a great way to use what you’ve already got. Even my toddler who’s not a fan of rice likes this dish. And not to mention it’s already dairy free and all that’s needed to make it gluten free is gluten free soy sauce. I really hope you enjoy this leftovers reimagined dinner.


Ingredients:

left over pork cubed (doesn‘t matter what it was seasoned with)

frozen shrimp thawed (but doesn’t have to be)

Cooked rice about 2 cups

frozen peas and carrots about a cup (can be more or less)

garlic 4 cloves minced or you can use dried

1/2 cup soy sauce (gluten free soy sauce)

Chopped green onion (optional)

salt and pepper to taste

olive oil or cooking spray

2 eggs beaten


Directions

If you don’t already have rice cooked you will want to get that cooked and in the refrigerator before you start.


First you will want to get your frying pan on over medium high heat and get the pan nice and hot (I like to use a wok but I know that not everyone owns one and a frying pan works just fine). Once hot add about a Tbsp of oil or use cooking spray put your shrimp in the pan with two cloves garlic minced, thats about 2 Tbsp of garlic, and add salt and pepper to taste cook through your shrimp should be a nice pink color. Once cooked remove from pan set aside to add back in later so the shrimp doesn’t over cook.


Next you will want to cook your pork in the same pan you just removed the shrimp from. Mostly you just want to warm the pork through and get a little color on it since it’s already been cooked previously. Add salt and pepper to taste. Once warmed remove from pan and set aside to be added back in at the end.


Now you will add a little more oil or cooking spray to your pan. place the rest of the minced garlic and the frozen peas and carrots in the pan and heat through. Remove from pan And set aside to be added in at the end.


Next you will scramble your eggs in the pan, once scrambled add cooked rice and soy sauce heat through. Now you will add back in to the pan the shrimp, pork, and the peas and carrots and stir together.


Serve and garnish with chopped green onion.
